This coconut sugar is a natural sweetener prepared from coconut blossom nectar, which is not bleached or processed in any way. The palm sugar is harvested by local farmers who are experts in climbing trees which can grow up to 150 metres high. Once up in the canopy, the farmer carefully cuts small notches into the tip of the coconut flower spikes and the nectar is collected at about the rate of half a litre every 6 to 8 hours. The nectar is then gently heated to to prevent fermentation and allowed to thicken into a caramel-like substance, which is poured into moulds, cooled, hardened, dried and finely ground in a mill. The sugar boasts a sweet butterscotch flavour, is GMO free, suitable for vegans and low in fat.
Uses for Coconut Sugar:
Coconut palm sugar can be used as an alternative to standard table sugar. The sugar can also be added to hot and cold drinks, breakfast cereals, deserts, raw chocolate and raw cakes.
