Apple Pie Cookie Pizza

Introducing the cosy and delicious Apple Pie Cookie Pizza! This delightful dessert features a baked cookie dough base, topped with spiced apples, toasted pecans, and a drizzle of peanut butter. Savour every bite of this warm and comforting treat!

Ingredients (serves 8):


For the toppings:


  1. Preheat the oven to 180°C. Line a pizza pan with parchment paper and set aside.
  2. In a large bowl, mix together the almond flour, oat flour, coconut flour, coconut sugar, baking powder, cinnamon, nutmeg, allspice, and salt until well combined.
  3. Add the vegan butter, applesauce, and vanilla extract to the bowl and mix until a dough forms.
  4. Press the dough onto the prepared pizza pan, shaping it into a circle. Bake for 20-25 minutes, or until lightly golden brown.
  5. Remove the cookie pizza from the oven and let it cool on the pan for a few minutes.
  6. Next, let’s make the spiced apple topping! Start by peeling, coring, and dicing the apples. Reserve a few thin slices for garnish.
  7. In a saucepan over low to medium heat, combine the diced apples, maple syrup, ground cinnamon, nutmeg, and a pinch of salt. Cook for about 5-7 minutes, or until the apples begin to soften and the mixture becomes fragrant.
  8. Add the golden raisins to the saucepan and continue to simmer for an additional 2-3 minutes, allowing the raisins to absorb the flavours. If the mixture becomes too dry, you can add a splash of water to prevent sticking.
  9. Spread the apple mix on top of the cookie pizza base, decorate with apple slices, toasted pecans and almond flakes and drizzle with peanut butter, then get ready to slice and serve with a drizzle of maple syrup.
