Flatbreads made from healthy lentils - These ones are soft, flexible and packed with fibre thanks to red lentils and psyllium husk - with cumin, garlic, herbs and sesame for loads of flavour.
Perfect piled high with creamy hummus, chilli crunch, lemon zest and crunchy seeds.
Simple ingredients, big flavour, and surprisingly easy to make.
Serves: 2–3 Prep Time: 10 mins (+ soaking) Cook Time: 10 mins
Ingredients
- 150g red lentils, rinsed
- 300ml water (for soaking)
- 120ml fresh water
- 1 tbsp psyllium husk
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 1 tsp garlic powder
- 2 tbsp sesame seeds
- 1 tbsp chopped coriander or parsley
- 1 tbsp olive oil
To Serve:
- Hummus
- Chilli crunch oil
- Lemon zest
- Extra herbs + toasted seeds
Method
- Soak the lentils for 2–3 hours (or overnight), then drain well.
- Add to a blender with fresh water, psyllium, salt, cumin, garlic powder and olive oil. Blend until smooth.
- Stir through sesame seeds and herbs. Rest for 5 minutes to thicken slightly.
- Heat a non-stick pan over medium heat and lightly oil.
- Pour in batter and spread into a thin round. Cook for 2–3 minutes until set, then flip and cook another 1–2 minutes.
- Repeat with remaining batter.
- Serve warm with hummus, chilli crunch, lemon zest and herbs.
