Looking for a fun, nutritious meal that everyone (yes, even the picky eaters!) will love? These Mini Flatbread Pizzas are just the thing. Made with chickpea flour, they’re naturally gluten-free, high in protein, and the perfect size for lunchboxes. 

Makes: 4 mini pizzas

Prep Time: 10 minutes

Cook Time: 10 minutes

For the base: 

  • 100g Chickpea (gram) flour
  • 1 tbsp ground flaxseed
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 150ml warm water
  • 1 tbsp olive oil

For the topping:

  • 4 tbsp sun dried tomato puree
  • Handful mushrooms, finely sliced
  • Handful sweetcorn
  • Grated vegan cheese

Method:

  1.  In a bowl, whisk together chickpea flour, flaxseed, baking powder & salt.
  2. Stir in water and olive oil to make a smooth batter. Let sit for 5 minutes.
  3. Heat a non-stick pan over medium heat. Pour in a ladle of batter and spread to form a mini pizza base.
  4. Cook for 2–3 minutes on each side until golden. Repeat with remaining batter.
  5. Spread the tomato purée over each base.
  6. Top with mushrooms, sweetcorn, and vegan cheese.
  7. Grill for 5 minutes until the toppings are cooked and the cheese is melted.
