Looking for a fun, nutritious meal that everyone (yes, even the picky eaters!) will love? These Mini Flatbread Pizzas are just the thing. Made with chickpea flour, they’re naturally gluten-free, high in protein, and the perfect size for lunchboxes.
Makes: 4 mini pizzas
Prep Time: 10 minutes
Cook Time: 10 minutes
For the base:
- 100g Chickpea (gram) flour
- 1 tbsp ground flaxseed
- 1/2 tsp baking powder
- 1/2 tsp salt
- 150ml warm water
- 1 tbsp olive oil
For the topping:
- 4 tbsp sun dried tomato puree
- Handful mushrooms, finely sliced
- Handful sweetcorn
- Grated vegan cheese
Method:
- In a bowl, whisk together chickpea flour, flaxseed, baking powder & salt.
- Stir in water and olive oil to make a smooth batter. Let sit for 5 minutes.
- Heat a non-stick pan over medium heat. Pour in a ladle of batter and spread to form a mini pizza base.
- Cook for 2–3 minutes on each side until golden. Repeat with remaining batter.
- Spread the tomato purée over each base.
- Top with mushrooms, sweetcorn, and vegan cheese.
- Grill for 5 minutes until the toppings are cooked and the cheese is melted.
