Hearty lentils, toasted walnuts, sweet cranberries and warming spices - all baked into a golden, sliceable loaf.
Serves: 6
Prep: 20 mins · Cook: 40–45 mins
Ingredients:
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, grated
- 100g mushrooms, finely chopped
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp dried thyme
- 200g cooked green/brown lentils
- 100g walnuts, finely chopped
- 75g rolled oats
- 2 tbsp ground flaxseed + 4 tbsp water
- 2 tbsp tomato puree
- 1 tbsp tamari or soy sauce
- Salt and black pepper
- Preheat oven to 180°C (160°C fan). Line a loaf tin.
- In a pan, fry onion & garlic in oil for 5-7 mins.
- Add the carrot, mushrooms, spices - cook 5 mins.
- Add the lentils, walnuts, oats, flax “egg”, tomato purée, tamari. Mix + season.
- Pack firmly into tin.
- Bake 40–45 mins until golden + firm.
- Cool slightly, slice, and serve with cranberry sauce.
