Caramel and chocolate - who would say ‘no’ to this winning combination? These homemade date caramel squares have everything you could wish for: a nutty base, a smooth caramel and a creamy chocolate layer, making them a delicious snack throughout the week!

Method:

  1. Place hazelnuts, oats and shredded coconut into a food processor alongside pitted dates, salt, and maple syrup. Process until the mix is coarse but sticky.
  2. Transfer the mix to a 8 x 8-inch lined dish and press the mix firmly into the bottom. Set aside into the fridge.
  3. For the caramel layer, blend together pitted dates, cashew butter, vanilla extract, coconut oil, sea salt and dairy-free cream until smooth. Spread the caramel layer on top of the base layer and place the dish back into the fridge to set.
  4. For the chocolate layer, first melt the chocolate in a double boiler, then pour in the dairy-free cream and whisk to combine until you get a thick chocolate mousse. Spread it onto the caramel layer evenly, then sprinkle with a little salt on top (optional) and set the dish into the fridge for a minimum of 1 hour before slicing.
  5. Slice into 16 equal squares and you’re ready to serve! These caramel squares are perfect alongside a cup of hot cocoa and best stored in an air-tight container in the fridge for up to 7 days.
