Soft, fluffy pancakes made with oats and ripe bananas. Finished with a nutty tahini–maple drizzle that makes them feel extra special.

Serves: 2–3

Ingredients

Pancakes

Tahini drizzle

  • 2 tbsp tahini
  • 2 tbsp maple syrup
  • 1–2 tbsp warm water

Method

  1. Add all pancake ingredients to a blender and blitz until smooth. Rest for 5 minutes to thicken.
  2. Heat a non-stick pan over medium heat and lightly grease.
  3. Spoon batter into the pan and cook for 2–3 minutes until bubbles appear. Flip and cook another 1–2 minutes.
  4. Whisk the tahini, maple syrup and warm water until pourable.
  5. Serve pancakes stacked with the drizzle poured over.
