Soft, fluffy pancakes made with oats and ripe bananas. Finished with a nutty tahini–maple drizzle that makes them feel extra special.
Serves: 2–3

Ingredients
Pancakes
- 150g oats
- 3 ripe bananas
- 2 tbsp maple syrup
- 250ml plant milk
- 1 tsp baking powder
- 1/2 tsp cinnamon
Tahini drizzle
- 2 tbsp tahini
- 2 tbsp maple syrup
- 1–2 tbsp warm water
Method
- Add all pancake ingredients to a blender and blitz until smooth. Rest for 5 minutes to thicken.
- Heat a non-stick pan over medium heat and lightly grease.
- Spoon batter into the pan and cook for 2–3 minutes until bubbles appear. Flip and cook another 1–2 minutes.
- Whisk the tahini, maple syrup and warm water until pourable.
- Serve pancakes stacked with the drizzle poured over.
