This oven-baked pancake is the easiest way to feed a crowd - fluffy, golden and bursting with blueberries.

Method

  1. Preheat the oven to 200°C (180°C fan) and line a baking tray with parchment.
  2. Whisk the flour, ground almonds, baking powder, cinnamon and salt in a bowl.
  3. Stir in the plant milk, maple syrup and vanilla until smooth.
  4. Pour the batter into the tray, smooth the top, then scatter over blueberries and flaked almonds.
  5. Bake for 18–22 minutes until set and lightly golden.
  6. Slice and serve warm.
