This oven-baked pancake is the easiest way to feed a crowd - fluffy, golden and bursting with blueberries.
Serves: 4–6
Prep Time: 10 minutes
Bake Time: 18–22 minutes
Ingredients
- 200g plain flour
- 50g ground almonds
- 2 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- 400ml plant milk
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 150g blueberries
- Flaked almonds, to top
Method
- Preheat the oven to 200°C (180°C fan) and line a baking tray with parchment.
- Whisk the flour, ground almonds, baking powder, cinnamon and salt in a bowl.
- Stir in the plant milk, maple syrup and vanilla until smooth.
- Pour the batter into the tray, smooth the top, then scatter over blueberries and flaked almonds.
- Bake for 18–22 minutes until set and lightly golden.
- Slice and serve warm.
