Lightly spiced pancakes with grated carrot and a sticky walnut crumble — perfect for brunch or a slow morning.

Method

  1. Mix the flour, baking powder, cinnamon, ginger and salt in a bowl.
  2. Whisk the plant milk, maple syrup and vanilla, then stir into the dry ingredients. Fold in the grated carrot.
  3. Cook pancakes in a lightly oiled pan for 2–3 minutes per side until golden.
  4. Toast the walnuts in a dry pan, add maple syrup and cinnamon and cook until sticky.
  5. Serve pancakes topped with warm walnut crumble.
