Lightly spiced pancakes with grated carrot and a sticky walnut crumble — perfect for brunch or a slow morning.

Ingredients
Pancakes
- 180g plain flour
- 1.5 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- Pinch of salt
- 250ml plant milk
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 small carrot, finely grated
Walnut crumble
- 50g walnuts, chopped
- 1 tbsp maple syrup
- Pinch of cinnamon
Method
- Mix the flour, baking powder, cinnamon, ginger and salt in a bowl.
- Whisk the plant milk, maple syrup and vanilla, then stir into the dry ingredients. Fold in the grated carrot.
- Cook pancakes in a lightly oiled pan for 2–3 minutes per side until golden.
- Toast the walnuts in a dry pan, add maple syrup and cinnamon and cook until sticky.
- Serve pancakes topped with warm walnut crumble.
