Soft apple chia filling wrapped in buttery peanut-oat crumble, baked until golden. The perfect snack for cosy days, packed lunches… or anytime.
Makes: 9–12 bars

Ingredients
Base and crumble:
- 200g rolled oats
- 100g ground almonds
- 3 tbsp maple syrup
- 4 tbsp peanut butter
- 85ml coconut oil, melted
- 1/2 tsp cinnamon
- Pinch of sea salt
Apple layer:
- 3 apples, peeled and diced
- 2 tbsp chia seeds
- 4 tbsp maple syrup
- 2 tbsp water
- 1.2 tsp cinnamon
Topping:
- 2 tbsp flaked almonds
Method:
- Preheat oven to 180°C (160°C fan). Line square tin.
- In a pan, cook apples with maple syrup + cinnamon 10 mins. Stir in chia.
- In a bowl, mix your oats, almonds, peanut butter, maple syrup, coconut oil + salt.
- Press 2/3 into tin.
- Spread over the apple filling.
- Crumble rest on top + sprinkle flaked almonds.
- Bake 20–25 mins until golden. Cool fully before slicing.
