Creamy overnight oats infused with vibrant ube and coconut for an easy make-ahead breakfast. Finished with crunchy almonds, coconut flakes and fresh berries, they're perfect for busy mornings.

Preparation time: 10 minutes (plus overnight chilling)

Ingredients (serves 1)

To Serve

  • Coconut flakes
  • Chopped almonds
  • Fresh berries

Method

  1. In a bowl or jar, combine the rolled oats, Grape Tree Ube Powder and chia seeds.
  2. Add the oat drink, coconut yoghurt and maple syrup, then stir well until everything is evenly combined.
  3. Cover and refrigerate overnight, or for at least 6 hours, until thickened.
  4. Stir the oats before serving, adding a splash of oat drink if needed to loosen the consistency.
  5. Finish with coconut flakes, chopped almonds and fresh berries.

Notes

  • Sweeten to taste with a little extra maple syrup if you desire.
  • Also delicious topped with sliced banana, mango or blueberries.
  • Store in an airtight container in the fridge for up to 2 days.
