Creamy overnight oats infused with vibrant ube and coconut for an easy make-ahead breakfast. Finished with crunchy almonds, coconut flakes and fresh berries, they're perfect for busy mornings.
Preparation time: 10 minutes (plus overnight chilling)
Ingredients (serves 1)
- 50g rolled oats
- 1 tbsp Grape Tree Ube Powder
- 1 tbsp chia seeds
- 150ml oat drink
- 2 tbsp coconut yoghurt
- 1 tsp maple syrup
To Serve
- Coconut flakes
- Chopped almonds
- Fresh berries
Method
- In a bowl or jar, combine the rolled oats, Grape Tree Ube Powder and chia seeds.
- Add the oat drink, coconut yoghurt and maple syrup, then stir well until everything is evenly combined.
- Cover and refrigerate overnight, or for at least 6 hours, until thickened.
- Stir the oats before serving, adding a splash of oat drink if needed to loosen the consistency.
- Finish with coconut flakes, chopped almonds and fresh berries.
Notes
- Sweeten to taste with a little extra maple syrup if you desire.
- Also delicious topped with sliced banana, mango or blueberries.
- Store in an airtight container in the fridge for up to 2 days.
