Dense, nutty and packed with oats, omega seeds, herbs and psyllium husk for a proper fibre boost.
It toasts beautifully, works with everything from hummus to nut butter, and has that hearty seeded texture that makes it feel really satisfying.
Simple, nourishing food at its best
Makes: 1 loaf Prep Time: 10 mins Bake Time: 45–50 mins
Ingredients
- 200g rolled oats
- 150g omega seed mix
- 2 tbsp psyllium husk
- 1 tsp salt
- 1 tsp fennel or cumin seeds
- 1 tbsp dried thyme or oregano
- 2 tbsp nutritional yeast (optional)
- 2 tbsp maple syrup
- 2 tbsp olive oil
- 400ml warm water
Method
- Preheat oven to 180°C (160°C fan) and line a loaf tin.
- Mix oats, seeds, psyllium, salt, spices, herbs and nutritional yeast.
- Stir in maple syrup, olive oil and water until fully combined.
- Leave to sit for 10 minutes to thicken.
- Transfer to tin, press down firmly and smooth the top.
- Brush with olive oil and sprinkle extra seeds on top.
- Bake for 45–50 minutes until firm.
- Cool completely before slicing (important).
- Toast before serving.
