  1. Preheat oven to 180°C (160°C fan) and line a loaf tin.
  2. Mix oats, seeds, psyllium, salt, spices, herbs and nutritional yeast.
  3. Stir in maple syrup, olive oil and water until fully combined.
  4. Leave to sit for 10 minutes to thicken.
  5. Transfer to tin, press down firmly and smooth the top.
  6. Brush with olive oil and sprinkle extra seeds on top.
  7. Bake for 45–50 minutes until firm.
  8. Cool completely before slicing (important).
  9. Toast before serving.
