A dried seed produced by the fennel herb, at first glance Fennel Seeds look a lot like cumin seeds only with a slightly greenish hue. However when you take one the flavour is more aniseed with a warm finish and sweet smell. They are great for flavouring meat, fish or vegetable dishes and have also been known to make an appearance in chutneys and breads. To extract the maximum flavour from the seeds it is recommended that you dry fry them over a medium heat.
