These fudgy almond + date truffles take 15 minutes, use just a handful of whole-food ingredients, and taste like the most indulgent treat.
Makes: 12 truffles
Prep Time: 15 minutes
Chill Time: 30 minutes
Ingredients
- 200g Medjool dates, pitted
- 100g ground almonds
- 3 tbsp cacao powder
- 1 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of sea salt
For coating:
- 1 bar dark chocolate (optional, melted)
- 2 tbsp crushed pistachios or chopped nuts
- 2 tbsp extra cacao powder for rolling
Method:
- Add dates, ground almonds, cacao, coconut oil, vanilla, and salt to a food processor.
- Blitz until smooth, sticky, and beginning to form a dough.
- Roll into small balls using your hands.
- Coat in melted chocolate + nuts, or roll in cacao powder.
- Chill for 30 minutes to firm. Store in the fridge for up to 1 week.
