Vegan Ferrero Rocher Truffles

The ultimate combination of toasted hazelnuts and rich chocolate! These dairy-free chocolate rocher truffles are one for the books! With only a few simple ingredients you can create this next-level chocolate snack - with a smooth and creamy chocolate and hazelnut centre and a nutty, crunchy chocolate shell.

Cook time: 0 minutes

Makes 20 truffles

Ingredients:

  • 90g hazelnut butter
  • 100ml dairy-free cream
  • 100g vegan milk chocolate + 200 g for the coating
  • 2 tbsp maple syrup
  • 1/4 tsp sea salt
  • 20 blanched hazelnuts + extra for chopping

Method:

  1. Start by placing a generous handful of hazelnuts onto an oven tray in a single layer and roast them in the oven at 150°C for 10 to 15 minutes. transfer them to a clean kitchen towel and rub the nuts in the towel to remove the majority of the hazelnut skins.
  2. Transfer your hazelnuts into a high-speed blender & process until the hazelnuts are broken down. Give your blender a regular break and scrape down the sides of your blender until you get smooth hazelnut butter. Set aside.
  3. Roughly chop the vegan chocolate and place it into a heat-resistant bowl. In a saucepan, carefully bring the cream to a simmer. Pour the hot cream over the vegan chocolate and set aside for 5 minutes. Stir in the hazelnut butter, maple syrup, and sea salt until smooth, then place the bowl into the fridge for 20 minutes.
  4. Transfer the creamy chocolate filling into a sphere shaped silicone pan and place a hazelnut into the centre of each chocolate sphere. Transfer to the freezer for 4 hours or overnight.
  5. Gently remove your ferrero rocher from the silicone mould, and roll them between your hands to create a round shape. Place them back into the freezer for 1 hour.
  6. In the meantime, melt the chocolate for the coating in a double boiler. Roughly chop the remaining hazelnuts and place them into a small ball. Roll the chocolate hazelnut balls in the hazelnuts, gently pressing the nuts into the ball, then dip them into the melted chocolate.
  7. Place on a non-stick surface in the fridge to harden.
  8. Enjoy your vegan ferrero rocher alongside a delicious cup of coffee!
