This rustic soda bread is studded with chopped walnuts and soft, sweet apricots, giving it just the right balance of savoury and sweet. No yeast, no kneading - just mix, bake, and slice while it’s still warm.
Makes: 1 loaf
Prep Time: 10 minutes
Bake Time: 35–40 minutes
Ingredients:
- 400g plain flour
- 100g wholemeal flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 100g dried apricots, chopped
- 50g walnuts, chopped
- 350ml buttermilk or plant milk mixed with 1 tbsp lemon juice
Method
- Preheat the oven to 200°C (180°C fan) and line a baking tray.
- Mix the flours, bicarbonate of soda and salt in a large bowl. Stir through the apricots and walnuts.
- Pour in the buttermilk (or plant milk mixture) and gently bring together into a soft dough. Shape into a round, place on the tray and cut a deep cross in the top.
- Bake for 35–40 minutes until golden and hollow-sounding when tapped underneath. Cool slightly before slicing.
