Creamy, fruity, and fi nished with a biscuity crunch - basically dessert disguised as breakfast. All the fl avours of a strawberry cheesecake, minus the oven time.

Ingredients (Serves 1):

Instructions: 

  1. Blend soaked cashews and plant milk until smooth and creamy.
  2. Stir in chia seeds, maple syrup, lemon juice and vanilla extract.
  3. Cover and refrigerate overnight.
  4. Top with strawberry compote and crushed digestives before serving.
