Creamy, fruity, and just a little bit exotic - this sunshine in pudding form is inspired by the classic mango lassi.

Ingredients (Serves 1):

Instructions:

  1. Blend the mango and coconut yogurt until smooth.
  2. Stir in chia seeds, cardamom and maple syrup if needed.
  3. Cover and refrigerate overnight.
  4. Serve topped with extra diced mango and a sprinkle of cardamom.
