Bright, zesty, and a little bit indulgent with that swirl of vegan lemon curd. Like your favourite lemon & poppyseed cake, only chilled and pudding-style.

Ingredients (Serves 1):

  • 3 tbsp chia seeds
  • 240ml coconut yogurt
  • Zest and juice of 1 lemon
  • 1-2 tbsp maple syrup
  • 1 tsp poppy seeds
  • Vegan lemon curd (made with coconut cream)
  • Fesh blueberries, to serve

Instructions: 

  1. Combine chia seeds, coconut yogurt, lemon zest and juice, maple syrup and poppy seeds.
  2. Cover and refrigerate overnight.
  3. Before serving, swirl with vegan lemon curd and top with fresh blueberries.
