Bright, zesty, and a little bit indulgent with that swirl of vegan lemon curd. Like your favourite lemon & poppyseed cake, only chilled and pudding-style.
Ingredients (Serves 1):
- 3 tbsp chia seeds
- 240ml coconut yogurt
- Zest and juice of 1 lemon
- 1-2 tbsp maple syrup
- 1 tsp poppy seeds
- Vegan lemon curd (made with coconut cream)
- Fesh blueberries, to serve
Instructions:
- Combine chia seeds, coconut yogurt, lemon zest and juice, maple syrup and poppy seeds.
- Cover and refrigerate overnight.
- Before serving, swirl with vegan lemon curd and top with fresh blueberries.
