A little festive magic in every bite. These spiced tartlets are a twist on the classic - filled with apricots, dates, citrus and warm spices, wrapped in a nutty almond pastry.
Makes: 10–12 tartlets
Prep: 30 mins · Chill: 30 mins · Bake: 18–20 mins
Ingredients
Pastry:
- 200g plain flour
- 75g ground almonds
- 100g vegan butter, chilled and cubed
- 2 tbsp maple syrup
- 2-3 tbsp cold water
Filling:
- 80g dried apricots, finely chopped
- 40g dates, finely chopped
- 60g mixed dried fruit
- Zest and juice of 1 orange
- 6 tbsp marmalade
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp mixed spice
Topping:
- Pastry stars (optional)
Method:
- In a bowl, rub the butter into flour + ground almonds until sandy.
- Stir in maple syrup + water to form a dough. Chill 30 mins.
- Preheat oven to 180°C (160°C fan).
- Mix all filling ingredients together.
- Roll pastry and cut rounds, press into lightly greased tartlet tin.
- Top with 1 tsp marmalade + filling + pastry star.
- Bake 18–20 mins until golden. Cool fully before serving.
