Mini Christmas Pudding Balls

A festive favourite with a twist! Try this healthy seasonal recipe for mini Christmas pudding balls. The recipe consists of a selection of mixed fruit and nuts flavoured with the spices of Christmas in a protein ball topped with cashew cream.

The recipe is raw, vegan, gluten free, refined sugar free and grain free.

Ingredients (Pudding):

  • 150g dates
  • 100g flaked almonds
  • 50g premium mixed fruit
  • 30g dried cranberries
  • 1 tbsp orange zest
  • 1 tbsp lemon zest
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp mixed spice
  • Handful of cranberries and pumpkin seeds for decorating

Ingredients (Cashew Frosting):

 

  • 50g raw cashews soaked overnight
  • 1 tbsp maple syrup
  • 2 tbsp soya milk
  • 1 tbsp lemon juice
  • 1 tbsp coconut oil
  • Vanilla extract

 

Method

  1. Combine the nuts, mixed fruit, orange and lemon zest, cinnamon, ground ginger and mixed spice to a food processor and blend for a few minutes until the mixture combines and becomes sticky.
  2. Roll the mixture to even sized balls. Should make 8-12 depending on the size desired.
  3. Make the frosting by adding the soaked cashews, maple syrup, soya milk, lemon juice, coconut oil and a drop of vanilla extract to a blender and blend until smooth. There should be no lumps bits.
  4. We recommend keeping the frosting in the fridge for 20-30 minutes to help it firm before using.
  5. Decorate as you wish. We have used dried cranberries and pumpkin seeds.
  6. Store in an airtight container in the fridge or freezer. Enjoy!
