Fluffy banana pancakes stacked high with yogurt and berries - simple, fun and perfect for sharing.

Ingredients

  • 2 bananas
  • 150g plain flour
  • 1 1/2 tsp baking powder
  • 250ml plant milk
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • Pinch salt

Blueberry compote

  • 150g blueberries
  • Splash water
  • 1 tbsp maple syrup

To serve

  • Greek-style yogurt
  • Maple syrup
  • Nuts/seeds (optional)

Method

  1. Mash bananas until smooth.
  2. Whisk flour, baking powder, cinnamon and salt in a bowl.
  3. Stir in banana, plant milk and maple syrup until smooth.
  4. Cook mini pancakes in a lightly greased pan for 2–3 minutes per side.
  5. Stack 3–4 pancakes per serving and top with yogurt, berries and syrup.
