Fluffy banana pancakes stacked high with yogurt and berries - simple, fun and perfect for sharing.

Ingredients
- 2 bananas
- 150g plain flour
- 1 1/2 tsp baking powder
- 250ml plant milk
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- Pinch salt
Blueberry compote
- 150g blueberries
- Splash water
- 1 tbsp maple syrup
To serve
- Greek-style yogurt
- Maple syrup
- Nuts/seeds (optional)
Method
- Mash bananas until smooth.
- Whisk flour, baking powder, cinnamon and salt in a bowl.
- Stir in banana, plant milk and maple syrup until smooth.
- Cook mini pancakes in a lightly greased pan for 2–3 minutes per side.
- Stack 3–4 pancakes per serving and top with yogurt, berries and syrup.
