Soft, warmly spiced carrot cake with crunchy walnuts and a creamy, tangy frosting -simple, nostalgic and perfect for sharing.

Serves: 8–10

Prep Time: 20 minutes

Bake Time: 40–45 minutes

Ingredients

Frosting

  • 150g vegan cream cheese
  • 3-4 tbsp icing sugar
  • Juice 1/2 lemon
  • Zest of 1/2 orange
  • Extra walnuts to decorate

Method

  1. Preheat oven to 180°C (160°C fan) and line a 20cm cake tin.
  2. Mix flour, baking powder, spices and salt.
  3. In another bowl, whisk oil, sugar, maple syrup, milk and vanilla.
  4. Combine wet and dry, then fold in carrot and walnuts.
  5. Pour into tin and bake 40–45 minutes until cooked through.
  6. Cool completely.
  7. Beat frosting ingredients until smooth and spread over cake.
  8. Decorate with chopped walnuts.
