Soft, warmly spiced carrot cake with crunchy walnuts and a creamy, tangy frosting -simple, nostalgic and perfect for sharing.
Serves: 8–10
Prep Time: 20 minutes
Bake Time: 40–45 minutes
Ingredients
- 200g plain flour
- 2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1 tsp ground ginger
- Pinch of salt
- 60ml neutral oil or melted coconut oil
- 150g light brown sugar
- 3 tbsp maple syrup
- 150ml plant milk
- 1 tsp vanilla extract
- 200g grated carrot
- 70g walnuts, chopped
Frosting
- 150g vegan cream cheese
- 3-4 tbsp icing sugar
- Juice 1/2 lemon
- Zest of 1/2 orange
- Extra walnuts to decorate
Method
- Preheat oven to 180°C (160°C fan) and line a 20cm cake tin.
- Mix flour, baking powder, spices and salt.
- In another bowl, whisk oil, sugar, maple syrup, milk and vanilla.
- Combine wet and dry, then fold in carrot and walnuts.
- Pour into tin and bake 40–45 minutes until cooked through.
- Cool completely.
- Beat frosting ingredients until smooth and spread over cake.
- Decorate with chopped walnuts.
