Almond Butter

Warm almonds blend more easily and offer maximum fresh almond taste. Roasting takes 10 minutes, and it’s worth the effort. Roasted almonds offer the same nutritional benefits as raw, although their vitamin content is a little lower.

Ingredients:

(Optional: ¼ tsp ground cinnamon, ½ tsp vanilla extract, 2 tbsp maple syrup or honey)

Method:

  1. Preheat the oven to 350F/160C/Gas 4. Spread the almonds across a large, rimmed baking sheet and toast for 10 minutes, stirring halfway.
  2. Let the almonds cool until they’re just warm (not hot).
  3. Transfer the almonds to a highspeed blender or food processor. Blend until creamy. If the mixture gets hot along the way, stop and let it cool for a few minutes.
  4. Only when the almond butter is very smooth and creamy can you blend in any other ingredients. You can add cinnamon for a hint of spice, salt, vanilla or maple syrup for an almond butter that tastes more special.
  5. Blend until the extras you choose are evenly dispersed and the butter is creamy again.
  6. Let the almond butter cool to room temperature, then transfer it to an airtight jar and screw on the lid. Store in the refrigerator for up to 2 weeks.

Cooks Tips:

Be patient. It might seem like the whole almonds will never turn into a creamy butter, but they will. Don’t give up!

Pair with strong flavours. Richer jams such as cherry or rhubarb compliment this perfectly.

Make a mixed nut butter. Include raw walnuts, cashews or pecans with the almonds.

Honey nut taste. Add a touch of honey to homemade almond butter for a lovely honey nut flavour.
