Say goodbye to boring chocolate bars – this Chocolate Fruit & Nut Bark is where indulgence meets feel-good snacking. Packed with naturally sweet dates, chewy apricots, tangy cranberries, crunchy puffed rice, seeds, and walnuts, it’s all swirled into rich dark chocolate and finished with a dreamy tahini drizzle.
Makes: 8–10 pieces

Ingredients
- 250g dark chocolate (70% or higher, vegan)
- 2 medjool dates, chopped
- 3 dried apricots, chopped
- 2 tbsp dried cranberries
- 2 tbsp puffed rice
- 2 tbsp mixed seeds (pumpkin, sunflower, sesame)
- 2 tbsp chopped walnuts
- 1 tbsp tahini for swirling
Method:
- Melt the chocolate gently over a bain marie or in the microwave in short bursts.
- Line a baking tray with parchment. Pour the melted chocolate onto the tray and spread to a thin layer.
- Scatter the chopped fruits, nuts, seeds, and puffed rice evenly on top.
- If using tahini, drizzle over and use a toothpick to create a swirl.
- Chill in the fridge for 30 minutes or until set.
- Break into chunks and store in the fridge in an airtight container.
