Uncooked polenta is a gluten-free alternative to flour in cakes, biscuits, and pastries. And when used in cakes can result in a moist and dense grainy texture.
Serve polenta as a hot creamy porridge, or cooled and turned into a loaf that can be baked or fried.
To cook use 1 part polenta to 4 parts boiling water or chicken stock. Make creamy polenta with grated parmesan for a delicious side dish.
