The cookie dough is very simple to put together and uses healthy wholefood ingredients such as tahini, maple syrup, oat and almond flour.

Prep time: 25 mins
Cook time: 12 minutes

Ingredients (makes 12):

Method:

  1. In a medium-size bowl, whisk together the tahini, maple syrup and vanilla extract. In a separate bowl, combine the oat flour, almond flour, salt and baking powder - make sure there are no lumps!
  2. Slowly fold the dry ingredients into the wet using a spatula.
  3. Set aside 3 tablespoons of the dough and fold the matcha powder into the remaining dough. If using, mix in the food colouring as well.
  4. Set the dough aside for 5 minutes to slightly firm up. In the meantime, preheat your oven to 160C.
  5. Start creating bite-size balls from the matcha dough. Place them onto a baking mat 2 inches apart and use the back of a fork to gently press a criss-cross pattern into the dough balls and flatten them. If the fork sticks to the dough, simply dip it into oat flour before pressing, that prevents the sticking.
  6. Use the rest of the dough to shape the turtle heads, arms/legs and tail, then create the eyes with a toothpick.
  7. Transfer to the oven and bake for 12-15 minutes or until the edges start to get golden.
  8. Allow for the cookies to cool down for 30 minutes before removing
