This speculoos-style date spread is rich, warmly spiced and seriously spoon-worthy. It’s made with dates, nuts and cosy spices, and works just as well swirled into a dessert as it does spread thickly on toast with fruit.
Prep time: 10 minutes
Ingredients
- 200g soft dates, pitted
- 50g walnuts
- 50g cashews
- 2 tbsp neutral oil or melted coconut oil
- 1 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- Pinch of ground cloves
- Pinch of salt
- 80-120 ml warm water (as needed)
Instructions
- Start off by softening the dates. If your dates aren’t very soft, soak them in hot water for 5-10 minutes, then drain.
- Add the dates, walnuts, cashews, oil, spices and salt to a food processor. Blend until thick and paste-like.
- With the motor running, add warm water a little at a time until you reach a smooth, thick, spreadable consistency. Scrape down the sides as needed and keep blending until completely smooth.
- Adjust spices or salt to taste, then transfer to a jar to store. Your speculoos spread is now ready to use! Spread it thickly on toast with sliced apple, banana or berries, spoon into small glasses and top with crushed biscuits or chopped nuts for a quick dessert, swirl it through plant yogurt or porridge or use as a filling for dates, pastries or sandwich cookies.
