It’s also perfect for sharing with friends and a brilliant bring-along for picnics, potlucks and BBQ parties!

Ingredients (serves 4):

  • 100g dried chickpeas, cooked
  • 1 small red onion, finely diced
  • 1 stalk celery, finely diced
  • 1 sweet red pepper, finely diced
  • 100g vegan yogurt
  • 2 tbsp vegan mayo
  • 1 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 tsp dijon mustard
  • 1 tbsp + 1 tsp curry powder
  • A handful of fresh coriander, chopped
  • Salt and pepper to taste

Method:

  1. In a large bowl, combine the cooked chickpeas, red onion, celery and pepper.
  2. In a separate small bowl, whip up the yogurt, mayo, lemon juice, maple syrup, and dijon mustard, stir through the curry powder and season to taste with salt and pepper.
  3. Add the curry dressing to the large bowl and mix everything together until well coated. Stir through the coriander and enjoy!
