Curry Leaves are the aromatic produce of a tree that belongs to the citrus fruit family and are rightly famed for the beautiful, nutty smell they produce when they are fried in hot oil.
They are a widely used ingredient in Indian and South Asian cuisines to flavour curries and rices, much in the same way that Bay Leaves are used in Western cooking. They can also be used in creating home made chutneys and preserves.
