Chai Vanilla Milkshake

Chai is a fragrant spiced milky tea from India. This smooth grown-up take on a milkshake uses some of the same spices that feature in the tea, such as cardamom and cinnamon. Vanilla and a little sugar add sweetness.

Ingredients:

To Make:

  1. Put 800ml of the milk, the sugar, tea leaves, vanilla pod, cinnamon, cardamom, and allspice in a saucepan and bring to the boil.
  2. Reduce the heat and simmer gently for five minutes, then turn off the heat, cover, and leave for 10 minutes. Strain into ice cube trays and freeze until solid.
  3. When ready to serve, put the frozen chai cubes in a blender with the remaining milk and the ice cream and whizz until smooth. Serve immediately.
