British Smoked Quinoa is a great healthy alternative to rice and couscous in Mexican chilli or a Moroccan tagine. Smoked using locally Shorpshire-sourced Oak, Ash and Beech it is a British take on an authentic South American flavour.

Rinse one cup of quinoa in a sieve under cold running water. Place into a pan, along with one and a half cups of water, adding any salt or flavourings that you like.
Bring to the boil, before reducing the heat to low and placing the lid on the pan. The quinoa is ready once all of the water has been absorbed.
